Keeping in the theme of last week's Thirsty Thursday post, I am sharing one more of my favorite agua fresca recipes. Get your daily dose of vitamin C and digestion-aiding bromelain with this tropical drink. Because the pineapple is naturally so sweet, there isn't a need to add any sugar to the mix. Sweet!
3 large pineapples, cored and cut into large chunks
48 oz unsweetened coconut water
6 limes, juiced
1 large handful mint leaves (stems removed)
Using a sharp knife, remove the skin and core from your pineapples and cut into large chunks. Using a high powered blender, add chunked pineapple and coconut water and blend at top speed until smooth and frothy. Add lime juice and mint and blend until totally combined.
If you prefer a pulp-free drink, press your mixture through a mesh strainer and into a large pitcher.
Allow the mixture to cool for 15 to 20 minutes in the refrigerator to allow the flavors to marry.
Stir well before serving. Enjoy over ice and garnish with mint leaves and lime (optional).
