When our student Nikki shared a pic of this dish, I had to give a whirl. So delicious, I must pass it on.
Chicken & Cauliflower Bake
The salty, crispy bite of the olives and cauliflower coupled with the simple lemon and herb preparation makes this dish zing! Tastes great served a top of a bed of baby spinach. Simply place the cooked chicken over the spinach leaves and cover with another plate or pot lid to allow the leaves to wilt as they soak up the aromatic oil on the chicken. Perfect!
Preparation Time: 10 minutes
Marinating Time: 1 hour to 24 hours
Cooking Time: 45-55 minutes
1 lb chicken breasts
1 head of cauliflower, cut into florets
1 bunch of fresh rosemary
1 bunch of fresh oregano
1 cup mixed Greek olives
2 shallots, finely minced
5 garlic cloves, minced
3 tbsp olive oil
1 tbsp lemon zest
1/4 c lemon juice
1 tsp fresh ground black pepper
1 tsp coarse sea salt
Coat the bottom of a glass or ceramic baking dish with 1 tbsp olive oil. Line coated dish with fresh herbs. Place chicken breast atop herbs. Add cauliflower florets to baking dish, assembling around and between chicken breasts.
In a blender, combine shallots, garlic, remaining olive oil, lemon juice, lemon zest, salt and pepper. Liquefy, then pour over chicken and cauliflower. Spread olives across pan, cover, and place in refrigerator to marinate for at least 1 hour (or overnight).
Bake uncovered at 400 degrees (F) for 45-55 minutes, until chicken is cooked through and cauliflower is browned.
